How to Uncork a Bottle of Champagne or sparkling wine
Bottles of Champagne and sparkling wines are,
of course, opened right at the table to prevent the precious
bubbles from escaping into the air.

Undo the clasp which fastens
the cork

Hold the cork firmly while rotating
the bottle
|

Pour a little of the Champagne
into each of the glasses |

Put the bottle in an ice-bucket
to keep it chilled |

Hold the bottle in one hand, using the other hand to undo the
clasp which fastens the cork.

Tip the bottle slightly, at an angle of 45°, and hold the cork
firmly while rotating the bottle : the cork will be easily
freed. Release the cork gradually so that the gas escapes gently
and noiselessly, without losing any of the froth.

Wipe the edge of the neck with a napkin, then pour a little of
the champagne into each glass before filling the glasses
two-thirds full.

Never cover up the label : the decorative label on a bottle of
wine is part of its charm.

Never allow the use of a whisk : this destroys the froth and
bouquet of the wine, and is an insult to the painstaking efforts
of the wine-grower and the cellarer.
