For a home party,
five or six wines make an interesting tasting. There may hardly
be less than four - and more than six may present some problem
as far as space, service, glasses and other details are
concerned.
For tasting purposes very
little of each wine (no more than one or two ounces) is poured
into the glass. A regular bottle contains about 20 servings. In
most cases, therefore, half bottles are preferred.
If food is served after the tasting, it is a
good opportunity for the guests to have a second taste of the
wine and see how they compliment the food. In such cases, wines
are bought by the bottle instead of the half-bottle.

People can go about tasting
French wines any way they want. but for the taste not to be
blunted, it is much more interesting to follow a logical order.
It helps, therefore, to present

first the dry whites

then the rosés
-
then the reds
-
last the sweet one
The bottles may be
arranged in any way which is convenient. either on a large
table, buffet style, or on several different tables on which
they are grouped by category. Bridge tables are good for such an
arrangement and they don't take up too much space.
What food to present
with a tasting is a matter of personal feeling. It may be as
little as plain Melba toast or slices of French bread to bite
between two different wines. Cheese and wine go so wonderfully
together that a tray of cheeses with Melba toast, or French
bread, is one of the most pleasant accompaniments to a wine
tasting. Of course, cheese is not served with the very sweet
wines.
A large array of
glasses on a table is always a brilliant sight. but few
households have that many glasses. If the number of glasses is
limited. it is a good idea to keep a large bowl, filled with
water. on each table for the guests to rinse out their glasses
after having tasted one wine. before going to the other.
Special glasses are not
essential to the enjoyment of a good wine, however, an “all
purpose" glass is
perfect for wines of all kinds.
